This rustic Peach-Blueberry Cobbler Recipe is so easy to make and can be modified to accommodate a variety of different fruits. It is quite possibly my favorite summertime dessert ever!

The first time I made cobbler was in Italy. We just got some fresh peaches from a local farmer at the bed and breakfast I was volunteering at and it was my turn to make the family meal. I wanted to make something that represented where I was from so I immediately thought of Peach Cobbler. It was a hit! So simple, yet so mouthwatering!

I am absolutely obsessed with any dessert that calls for baked or stewed fruit. Cobbler, pie, crisp, crumble, galette, buckle, sonker… yes there is one called a sonker. This cobbler recipe calls for a jammy mix of peaches, super light batter and lots of butter! The blueberries help thicken up the cobbler and give it a beautiful pop of color and sweetness.
Tips & Tricks
This recipe uses simple pantry staple ingredients, so you may not even need to leave the house!

The hardest part about this recipe is to NOT STIR THE LAYERS TOGETHER. I know it’s tempting, but it’s as easy as 1,2,3! Do not mix the layers! You can get a spoon and arrange the fruit on the top so it’s evenly spread out but, I repeat, do not mix the layers!
No fancy equipment needed here! Just a 13 x 9 baking dish, a pan, bowl, whisk and spatula. You can go all peach with the cobbler with 4 cups of peaches or mix in a cup of blueberries or raspberries with 3 cups of peaches!

Peach-Blueberry Cobbler Recipe
This rustic Peach-Blueberry Cobbler recipe is super easy! You can go all-in and just use peaches or swap out the blueberries for other fresh fruit like raspberry, strawberries or fresh cherries!

Ingredients
- 1/2 Cup Unsalted Butter (1 stick)
- 1 Cup All-Purpose Flour
- 2 Cups Granulated Sugar, divided
- 1 Tbsp Baking Powder
- 1/2 tsp Kosher Salt
- 1 Cup Milk
- 3 Cups Fresh Peaches, peeled, pitted and sliced
- 1 Cup Fresh Blueberries
- 1 Tbsp Fresh Lemon Juice (1/2 Lemon)
- 1/4 tsp Cinnamon
Directions
- Step 1 Preheat oven to 350F. Place butter in a 13 x 9 baking dish and melt it in the oven, about 8-10 minutes.
- Step 2 In a large bowl, combine peaches, blueberries, 1 cup of sugar, and lemon juice. Stir and let sit while you make the batter.
- Step 3 In a mixing bowl, whisk together flour, baking powder, salt and the remaining 1 cup sugar. Add milk and whisk until just combined. Pour batter over the melted butter.
- Step 4 Spoon the fruit evenly over the batter. Do not stir the layers together. Sprinkle cinnamon over the top.
- Step 5 Bake for 45 minutes or until golden brown and set.
- Step 6 Serve warm w/ Blue Bell vanilla ice cream.
