This Peach Crisp is one of my all-time favorite desserts. Fresh ripe peaches topped with an oatmeal pecan streusel, baked until bubbly and golden brown and then topped with ice cream or yogurt. I am in heaven. This crisp makes for surprisingly wonderful breakfast to enjoy with your coffee the next day as well.

Peaches I like to peel my peaches for the optimal texture. To make the filling, toss the peaches with lemon juice, sugar, cornstarch, vanilla and salt. Then let it sit while you make the streusel topping.
For the last 4 years, we have been getting Georgia peaches from The Peach Truck. We pick up one or two 25-pound cases and then eat peaches every day until we run out. They are the best peaches I’ve ever had (Sorry Parker County)
Oatmeal I use Quaker Old Fashioned Oats for this recipe. To make the streusel, you will combine brown sugar, flour, oats, pecans, cinnamon, nutmeg and salt in a bowl. Then add softened butter and mix until you get a crumbly texture streusel. If you are wanting to make this recipe gluten free, make sure the Oats are gluten free and substitute the 1/2 cup of All Purpose Flour for 1/2 cup of your favorite Gluten Free All Purpose Flour.
Pecans We always have roasted and salted Pecans in our house. They are our favorite nuts, plus they give you the perfect crunch and that extra pinch of salt.
Top It Off Bluebell Vanilla Ice Cream is the obvious pairing with this Peach Crisp. BUT…..I love swapping that for a dollop of plain yogurt as well. It adds a little extra tanginess and reduces the amount of overall sugar in the dish.

Peach Crisp with Oat Pecan Streusel
This peach crisp is perfect, especially with the oatmeal pecan streusel on top. Top with ice cream and you will be in heaven.
Ingredients
- **For the Filling**
- 6 cups peeled and sliced Peaches (about 10 peaches)
- 2 Tbsp. Lemon Juice
- 1/3 cup Granulated Sugar
- 2 Tbsp. Cornstarch
- 1/2 tsp. Vanilla Extract
- 1/8 tsp. Kosher Salt
- **For the Streusel**
- 3/4 cup Brown Sugar
- 1/2 cup All Purpose Flour
- 3/4 cup Old-Fashioned Oats
- 3/4 cup Pecans, toasted and chopped
- 1 tsp. Cinnamon
- 1/4 tsp. Nutmeg
- 1/4 tsp. Kosher Salt
- 1/2 cup Unsalted Butter, softened (1 Stick)
Directions
- Step 1 Preheat the oven to 350F and grease a 2 quart baking dish.
- Step 2 **For the Filling** In a large bowl, combine the peaches, lemon juice, granulated sugar, cornstarch, vanilla, and salt and stir until mixed evenly.
- Step 3 **For the Streusel** In a medium bowl combine all of the streusel ingredients and mix with a fork or your fingers until the mixture is crumbly and looks like wet sand.
- Step 4 Place the peaches in the baking dish and spread until even. Top the peaches evenly with the oat-pecan streusel. Bake for 40-45 minutes or until the filling is bubbly throughout and the streusel is golden brown. Let cool for about 30 minutes before serving. Top with ice cream or yogurt and enjoy!
