Pickled Red Onions are my Favorite Kitchen Hack

We go through a jar of pickled red onions in a week because we put them on everything! They’re a a perfect garnish for breakfast tacos, salads, sandwiches, anything with smoked salmon, grain bowls, wraps, BBQ and more. They just add such a nice pop of flavor AND color to any dish. 

It is literally white distilled vinegar, sugar, salt and red onions. They are so delicious, crunchy and beautiful! I love watching them slowly turn bright pink in the pickling liquid. They only need about 30 minutes of steeping, and they are ready to go. 

If you want to add some extra heat or flavor, add a pinch of Chili flakes or a bay leaf.

Try them as a perfect garnish on our Honey Chipotle Tacos or Carnitas Tacos.

Pickled Red Onions

We put these pickled red onions on everything.

Ingredients
  • 1 Red Onion, thinly sliced
  • 1 Cup Distilled White Vinegar
  • 1/4 Cup Granulated Sugar
  • 1/2 tsp Kosher Salt
Directions
  • Step 1 Combine the white vinegar, sugar and salt in a small saucepan, and bring to a boil. Once boiling, remove from heat and stir until the sugar and salt is disolved.
  • Step 2 Place the onions in a heat proof dish, like a mason jar or a glass bowl. Use a funnel or carefully pour over the red onion. Cover and let them sit for at least 30 minutes, stirring once or twice to ensure even pickling. Refrigerate once they are cooled. Consume within 2-3 weeks.
