Texas Caviar is a colorful and zesty dip loaded with corn, black beans, black eyed peas, peppers, tomatoes and cilantro, tossed in a cumin lime vinaigrette. It’s the perfect make-ahead dip for a party! Serve it with tortilla chips and dig in!
What’s in Texas Caviar?
Bell Pepper & Jalapeños These peppers bring color, crunch and heat to this dip. I like to use orange bell pepper because it adds an extra color and natural sweetness to the dip.
Tomatoes Roma tomatoes or quartered cherry tomatoes both do great in the dip. Romas are firmer and have less seeds.
Cilantro Herbs add a burst of flavor to the dip. Cilantro can be substituted with parsley as well!
Onion Green onions or red onions add a punch to this dip. Choose your favorite or whichever you have on hand!
Corn I like using canned corn out of convenience, but you can use fresh or frozen as well.
Black Eyed Peas Canned black eyed peas, are delicious and convenient. You will need to rinse and drain them.
Black Beans We always have black beans in our pantry for a quick meal. A quick rinse and drain is all you need. Pinto beans make a great substitution if needed!
Cumin Lime Dressing Garlic, cumin, lime, salt, pepper and olive oil come together to make a bright dressing that brings everything perfectly together.
What to serve with Texas Caviar Tortilla Chips or crostinis are the perfect vehicle for Texas Caviar. Texas Caviar can also be a delicious topping to grilled chicken, pork or fish.

Texas Caviar
Texas Caviar is a colorful and zesty dip loaded with corn, black beans, black eyed peas, peppers, tomatoes and cilantro tossed in a cumin lime vinaigrette.
Ingredients
- 1/4 cup fresh Lime Juice
- 1/2 cup Olive Oil
- 4 cloves of Garlic, minced
- 1/2 Cup Cilantro, finely chopped
- 1/4 cup thinly sliced Green Onions or diced Red Onion
- 2 tsp Cumin
- 1 1/2 tsp Kosher Salt, plus more if needed
- 1/2 tsp Pepper
- 1 Orange Bell Pepper, small diced
- 1 Jalapeño, seeded and small diced
- 1 cup Tomatoes, seeded and diced
- 1 15 oz canned Corn, drained
- 1 15 oz can of Black Eyed Peas, rinsed and drained
- 1 15 oz can of Black Beans, rinsed and drained
Directions
- Step 1 In a large bowl, whisk together lime juice, olive oil, garlic, cilantro, onion, cumin, salt and pepper.
- Step 2 Add the remaining ingredients and stir until combined. Season to taste.
- Step 3 Serve with chips or serve on top of grilled Chicken, Pork or Fish.
