English Muffin & Breakfast Sausage Casserole

Have you ever eaten a Sausage McMuffin? This taste just like it, but in a casserole. This is my go-to breakfast casserole because it is such a crowd pleaser. You can jazz it up with green chiles and green onion, or serve it with salsa or hot sauce on the side.

Wake Up to Deliciousness

Sausage Jimmy Dean regular sausage is our favorite. If your family or friends like spicy, grab the spicy sausage or throw in a can of green chiles.

English Muffin Thomas English Muffins make this casserole more unique than a lot of other breakfast casseroles. It gives it a fun nook and cranny texture and sourdough flavor. If you don’t have English muffins, you can use the same amount of your favorite sliced bread instead. 

Cheese I use a cheddar jack cheese, but you can use pepper jack, cheddar, or any of your favorite shredded cheeses.

Additions Add a 4 oz can of green chiles or 1/4 cup of green onions to the casserole before adding the eggs.

Make Ahead You can bake this casserole ahead of time, let cool and store in the fridge until you are ready to eat. If you want to reheat the whole casserole, bake at 350F for 30 minutes or until hot throughout. We like to enjoy this casserole throughout the week. We simply slice off a piece and microwave until hot or throw in the oven at 350F for 12 minutes or until sizzling.

Freeze Affter baking, let cool completely, cover tightly with plastic wrap and put in the freezer. It should be good for 3 months in the freezer. To thaw, put the casserole in the fridge the day before you want to reheat it. Bake at 350F for 30 minutes or until hot throughout.

Pairings This obviously goes well with coffee, but feel free to bust out the Mimosas, Bloody Marys or Micheladas with this breakfast. Serve with a side of fresh fruit, scones or my Chocolate Peanut Butter Banana Bread for a perfect breakfast spread.

Ingredients
  • 1 pound Breakfast Sausage
  • 4 English Muffins, halved
  • 8 oz. Shredded Cheddar Jack Cheese, 2 cups
  • 8 Eggs
  • 2 cups Milk, I use 2% Milk
  • 1 tsp. Kosher Salt
  • 1/2 tsp. Black Pepper
  • A few dashes of Tabasco or Franks
  • 4 oz. can of Green Chiles, optional
Directions
  • Step 1 Preheat oven to 350F and spray a 13Γ—9 inch pan with cooking spray or butter.
  • Step 2 Brown the sausage and drain the grease on a paper towel.
  • Step 3 Toast English Muffins on a sheet pan for 15 minutes (or toast the halved english muffins in your toaster). Once cooled, tear into bite sized pieces.
  • Step 4 In a medium bowl, whisk together eggs, milk, salt, pepper, and Tabasco or Franks.
  • Step 5 Evenly spread out the english muffins and sausage in the casserole dish.
  • Step 6 Sprinkle cheese and green chiles, if using, evenly over sausage. Pour egg mixture over cheese. Let sit 5 minutes before baking.
  • Step 7 Bake for 40 minutes or until the casserole is set and golden brown. Let cool 10 minutes before serving.
