This loaded baked potato casserole is the ultimate potato dish. You hit the jackpot with every single bite. This recipe will be a smash hit at your next backyard BBQ or holiday gathering. But I have to warn you, once you’ve tried this dish, you may never go back to plain jane mashed potatoes again!

All the Good Stuff Please!

Boiling the Potatoes – Makes the prep quick and easy. A medium potato takes about 30 minutes to boil, which is half the amount of time as baking the potatoes.

Bacon – I like to cook my bacon in the oven. It is hands free and cooks evenly. Preheat your oven to 400F and place the bacon on a foil lined sheet pan. Bake for 20 minutes or until crispy. I like to go a little crispier on the bacon in this dish to add an extra layer of crunch.

Make Ahead – If you are making this ahead of time, add an 2 extra tablespoons of milk. Once you have combined all of the ingredients together, let cool and top with cheese. Then cover with aluminum foil and refrigerate until you are ready to bake it. Bake the dish at 400F for 45 minutes, removing the foil for the final 15 minutes.

Sour Cream and Milk – We like to use low fat sour cream and milk in this dish, but you can use regular sour cream and whole milk for ultimate creaminess.

Cheese – We love using shredded Cheddar or Cheddar Jack. We’ve found that if you use low fat cheese, the top may not get as melty and gooey. But don’t worry, it’s still delicious.

Goes Well With – These potatoes make a perfect companion for backyard BBQ, Meatloaf and Thanksgiving Dinner! Pairs well w/ Chardonnay or Bubbles.

This is the ultimate potato dish. You get the jackpot bite in every bite. This will be the star of the show at your next BBQ.

Ingredients
  • 2 lbs. Russet Potatoes, washed
  • 4 Tbsp. Unsalted Butter, melted
  • 1/2 Cup Light Sour Cream
  • 1/2 Cup Milk, low fat or whole
  • 1/4 Cup Sliced Green Onions
  • 6 Slices of Bacon, cooked and chopped, yields 1/2 cup
  • 1/2 tsp Kosher Salt, plus 1 tsp. for boiling the potatoes
  • 1 tsp Fresh Cracked Black Pepper
  • 1 C Shredded Cheddar Cheese
Directions
  • Step 1 Preheat oven to 400F and grease an 8Γ—8 inch or 9Γ—9 inch oven safe dish.
  • Step 2 Place potatoes in a medium pot and fill up with water until the potatoes are covered. Add 1 tsp. of salt and bring to a boil. Once boiling, reduce to a simmer and boil for 30 minutes or until you can easily poke a knife through them. Drain and let cool.
  • Step 3 Once they are cool enough to touch, peel the skin off the potatoes and place them in a large bowl (its ok to leave some skin on).
  • Step 4 Mash the potatoes with a potato masher or a sturdy whisk. Add the butter, milk, sour cream, bacon, green onion, salt and pepper and mash until smooth.
  • Step 5 Place in the greased oven safe dish and top evenly with cheese.
  • Step 6 Bake for 30 minutes or until hot and cheese is melted and golden brown.
  • Step 7 Enjoy!
