These Herb Dijon Pork Chops are our favorite! All you need is a few pantry staples and at least 30 minutes to marinate. Bright herbs and zesty dijon will take your pork chops to another level. They are perfect to pan sear or throw on the grill.
About Herb Dijon Pork Chops
Pork Chop My Favorite pork chop cut is a Ribeye Pork Chop which comes from the rib area of the loin. They are so tender and flavorful, perfect for a quick sear. I like to pound the thicker chops out to about 1 – 1/2 inch thick.
Quick little tip*** Do you want to know the secret to the center of the pork chop not lifting from the pan? Cut a 1/2 inch slit with scissors or a knife into a side of the pork chop. It helps the pork stay flat on the pan to get a nice even sear.
Dijon Mustard H-E-B has my all time favorite dijon mustard. It has the perfect balance of tang and spiciness, without being bitter or harsh. Dijon mustard and pork are a great pair.
Herbs Dried chives, dill and parsley are the perfect trio for this marinade. If you can’t find or don’t have all three, simply substitute more of one or two for the other.
Olive Oil adds a lovely rich flavor while also keeping the chops moist and giving it a great sear. Fat helps to round out flavor and keep sharp or acidic flavors from dominating.
Marinate You should marinate the pork for at least 30 minutes and up to 3 days. If I am marinating the day I am cooking the pork chop, I just use a bowl. If I marinate the pork overnight, I use a ziplock bag or casserole dish with a lid to keep it secured in the fridge. One of my favorite things about this marinade is that we almost always have all of the ingredients in the pantry. It’s a perfect go-to recipe when you are low on groceries! There is plenty of salt and pepper in the marinade, so no need to season the pork chops before searing,

Herb dijon Pork Chop
Bright herbs and zesty dijon will take your pork chops to another level.
Ingredients
- 2 lb. 1 inch thick Pork Chops (we like Ribeye Chops)
- 2 Tbsp. Dijon Mustard
- 2 Tbsp. Olive Oil
- 1 tsp. Dried Parsley
- 1 tsp. Dried Dill
- 1 tsp. Dried Chives
- 1 tsp. Kosher Salt
- 1/2 tsp. Ground Black Pepper
Directions
- Step 1 In a small bowl, combine the dijon, olive oil, dried herb, salt and pepper.
- Step 2 Pound the Pork Chops out if needed and place in a zip lock bag or casserole dish. Evenly coat the pork chops with the herb dijon marinade and let it marinade for 30 minutes to overnight in the refrigerator.
- Step 3 When you are ready to cook, take the pork out of the fridge. Heat a large saute pan or oiled grill, on medium high heat. Place the pork chop on the pan or grill and cook on one side for 8-10 minutes and then flip and cook for another 8-10 minutes, lowering the heat if needed. Cook until the pork has reached the desired temperature. Let the pork chop rest for 5 minutes before slicing to keep in nice and juicy.
