The Best Pumpkin Bread & Apple Cider Glaze

Pumpkin + Apple Cider + Brown Butter = Deliciousness! There is a perfect balance between the pumpkin, apple cider, spices and the nuttiness of the brown butter. 

About This Pumpkin Bread

Pumpkin You will need one 15 oz. can of Pumpkin Puree. Libbyโ€™s 100% Pure Pumpkin is my favorite canned pumpkin.

Apple Cider Apple Cider adds flavor and helps create a moist bread. It also adds a bright flavor in the glaze.ย 

Brown Butter Brown Butter makes everything better. If you have never browned butter before, simply melt your butter at medium heat in a sauce pan, swirling or whisking occasionally until it turns a nice brown color and then take it off the heat. There will be little brown bits on the bottom of the pan, make sure to use that too. Whisking the butter as it is bubbling makes for a nice even browning.

Flour You can use whole wheat or all purpose flour for this recipe.

Sugar Granulated Sugar adds a lighter and more tender crumb in the bread. For a richer and denser bread, you can substitute light brown sugar.

Spices Using a jarred Pumpkin Pie Spice is an easy way to get all of those great fall spices without having to buy and combine on your own. If you donโ€™t have pumpkin pie spice, use 1 teaspoon cinnamon, 1/2 teaspoon ginger, 1/2 teaspoon cardamom, allspice or cloves and a pinch of nutmeg. Make sure to whisk the spices in really well with the flour.

Ingredients
  • 2 Sticks of Unsalted Butter, browned and slightly cooled
  • 2/3 cup Apple Cider
  • 1 T Vanilla Extract
  • 1 15 oz. Can Libbys Pumpkin Purรฉe
  • 4 Eggs
  • 3 cup All Purpose Flour
  • 1 3/4 cup Granulated Sugar
  • 1 1/2 tsp Baking Soda
  • 1 1/2 tsp Salt
  • 2 tsp Pumpkin Spice
  • **For the Glaze**
  • 1 1/2 cup Powdered Sugar
  • 2-3 Tbsp. Apple Cider
  • Pinch of Salt
Directions
  • Step 1 Preheat oven to 350F. Grease two 8โ€ loaf pans.
  • Step 2 Whisk brown butter, apple cider, pumpkin, eggs, and vanilla extract together in a large bowl.
  • Step 3 In a medium bowl, whisk flour, sugar, baking soda, salt and pumpkin spice together. Whisk the dry ingredients into the wet ingredients until combined. Do not over mix.
  • Step 4 Pour evenly into 2 greased bread pans and bake for one hour or until a toothpick comes out clean when insterted into the center.
  • Step 5 While your bread is cooling, in a small bowl combine your powdered sugar with 2 Tbsp of apple cider and a pinch of salt. Stir until it turns into a glaze, add more cider a few drops at a time if needed. Drizzle glaze over bread.
